We are half way through January! Which means that I’m halfway through Whole 30! One of my goals this year is to eat healthier and one way that I do that is by following Whole 30 in January. So I’m rounding up my favorite, easy, go to recipes that help me get through this 30 challenge. These picks are dishes that I tend to make year round though because they are just that good!

I love a quick sheet pan recipe and this was the first one I ever made. Now this can be adapted to ANY veggie combo you want. I love a roasted broccoli and tiny potatoes or a sweet potato and cauliflower option too!
Mexican Cauliflower Rice
When I’m looking for an easy meal that will feed me for a few meals, I always turn to this one. I tweak the recipe a bit but essentially I add in cauliflower rice, ground turkey, taco seasoning packet, bell peppers, canned diced tomato and green chilis. Add some avocado on top and you are good to go!
